pumpkin & chocolate cookies


A friend of mine posted this recipe for pumpkin cookies and I had to try it out.
I bought nutmeg and pumpkin puree, assuming the rest of the ingredients were in my
cupboards. Excitedly I started mixing but soon realized I was short on sugar,cloves,
cinnamon and butter. It was late and I didn't want to drive to the store so I just made due
with what I have. I ended up editing her recipe to the point that I'm pretty sure these are
nothing like the ones she made. Nevertheless they're irresistible!
This is roughly my recipe, but for the original, iced version go here.

2 1/2 cp flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
3/4 cp butter
1/4 cp butter flavored shortening
1/2 cp white sugar
1/2 cp brown sugar
1 can pumpkin puree
1 egg
1 tsp vanilla
1 pkg milk chocolate chips

Measure and combine dry ingredients, minus sugars. Cream butter, shortening and
sugars. Add pumpkin, vanilla, egg and mix. Add dry mixture and chocolate.
Bake for 11 mins @ 350.

  8. i definitely like the idea of your version better with the chocolate and no frosting, but why did you use MORE butter? I wonder how it would work with molasses instead of sugar, or instead of part of the sugar? applesauce instead of more of the sugar? I am going ot have to experiment I suppose *huge sigh.....

  12. My family made this recipe every year while I was growing up (we added oatmeal and shaped the 1/4c spoonfuls into pumpkin shapes with stems). Now that I'm a wife & mom, I've carried on the tradition. It's not fall in our home until we've made pumpkin cookies! :)
