cinnamon almond bars



I've been making these all week and they've been a big hit. The coconut oil makes them so buttery and smooth but healthier. A quick and tasty bar that's filling and slightly sweet. The name just about gives away all the ingredients, it's that simple.

You'll need:
1 tsp ground cinnamon
3 tbsp ground flax
2 tbsp creamy almond butter
2 tbsp coconut oil

Mix all ingredients in a bowl with a fork, you'll need it to mash up the coconut oil if it's at room temperature, I prefer not to warm it up for thicker consistency.
Put the mixture in a small, deep dish lined with parchment paper. Set in freezer to set up for 10-15 minutes, remove and cut into squares pieces.

Enjoy your vegan, guilt free, easy to make bars!

  5. These look so good. I just made banana bread recently and decided to use coconut oil, but it had solidified and I didn't know that I should warm it up a little. It took me forever to mix it into the mix. My mom was laughing at me. Definitely going to have to try this recipe.

  10. Does this recipe only produce a small amount? I ask because I just made it and there's only enough for about 4 pieces that are half clif-bar sized. Mine is still in the freezer, can't wait to get a taste!


    1. The bars are pretty small but it made the two plates full of what's pictured. They're thin though so if yours are thick they won't make as much. You might want to double the recipe!
